JOB SUMMARY:
-Oversees production and service kitchen. This position is responsible for menu and recipe development, food and labor cost controls, food safety and presentation, preparation and adherence to recipe guidelines for Retail & Residential Dining.
-KM executes menus, recipes and ingredients in alignment with KU Dining Services food management database system and nutrition presentations system.
Collaborates on new menu offerings.
-Collaborates with KU Dining Registered Dietitian and Executive Sous Chef for Retail & Residential Dining on events, menu rotations, LTO’s and trends.
Provides training and development programs for production staff to improve food handling, sanitation, hands on preparation of recipes, presentation of food, garnishing, and portion control in all assigned areas.
-Assists in preparation for food and beverage events across KU Dining locations.
May work special projects as assigned by the Registered Dietitian and Assistant Director of Dining Services.

Salary ranges from $42,119 to $52,649/year.
